If you’re wondering about the whole carcass double the weight for the approximate yield, as you’d be getting two of each of the above mentioned cuts.
This is a link I’ve found useful for understanding the different cuts of meat and where they come from.
Our cost is $3.50/ lb carcass weight
Butcher cost generally runs at another $1/ lb carcass weight.
Average carcass weight being 323lbs
 
If you pick up the meat from the butcher, you’ll have pay him and leave a cheque for us there, made out to Nature’s Green Acres, drop it off at our booth in the City Hall Farmers market (Oct 15-till mid May).
You can’t have the meat till it’s paid in full, (pretty obvious, but it needs to be said)
 
How this works is shortly after the kill day we’ll send out a list of carcass weights and tag #’s, let us know which one you want and we’ll put you down for that one, or if you’re only interested in a half, let me know and we’ll put you together with another halfer. One will be ????A and the other ????B.
When I confirm your weights (incase two people want the same weight, the first email gets it) call the butchers, they will walk you through having it cut up.
 
If you can’t get to Tofield for pick up we could meet you in at The City Hall  Market with your order but you have to pay the butcher before they’ll release it. They take Credit card and debit, I’m not sure about cheque you’ll have to ask.  Please try and pick up in Toefield as we have limited space to bring your big order as well as our meat for the market. If circumstances don’t allow you to do that please be there to pick up at 9:30am in the under ground parking lot.
 
Just remember nouveau beef is tender on every cut, so don’t just have a cut ground up because that’s what you’d do on a regular beef.  Cuts that usually are roasted like the inside and outside rounds make some nice steaks for grilling. Generally unknow cuts like the tri tip, flank, skirt, petite tender, ect.. are actually very tender and flavorful, don’t be afraid to give them a try.
